Owners Risk Double the Defeat in Hopes of Double the DoughJEROME BURDI , The Saratogian 09/14/2003SARATOGA SPRINGS - Bobby Mitchell, owner of Wheatfields restaurant on Broadway, is about to do what many other downtown entrepreneurs have done -- some with success -- and open another business. On Friday, Doc's Steakhouse will open at 63 Putnam St. Mitchell said he wanted to open another business for years and was intrigued by the idea of going back to an old-world, no frills menu like his grandfather, Dr. R.N. Saxby, liked. Mitchell was the executive chef at two different businesses under one roof in Vermont -- a French restaurant and a pub. 'To me, it was one thing,' he said. For Mitchell, adding the second business seems straightforward. He'll run two businesses and cook for them, going back and forth. 'It's a change of pace,' Mitchell said.
