DOWD , Times Union 09/14/2003A Saratoga switcheroo adds steakhouse to list Bobby Mitchell, owner of Wheatfields on Broadway, plans a Friday, Sept. 19, opening of Doc's Steakhouse at 63 Putnam St. That's the space that once held the Putnam Street Market (now on Broadway) and then Graham's restaurant. It has been vacant for more than a year. Earlier this year, brothers Adam and John Madkour said they planned to move their Eartha's Bistro operation there from its spot near Congress Park, but that plan obviously did not come to fruition. Four recent messages left at Eartha's requesting comment on any plans for the restaurant went unanswered. The new Doc's, which will feature extensive decor changes throughout, will seat about 109 inside and about 40 on the patio. Mitchell, who says he will float between his two restaurants, has a pair of Culinary Institute of America graduates in the Doc's kitchen: Dale Witter, a local boy who just returned from two years of cooking at the Rio's resort in Las Vegas, and Charlie Hoffmeister, who teaches culinary arts in the BOCES program and has helped spell Mitchell at Wheatfields for the past eight years.
